A rich and savory soup inspired by the classic Reuben sandwich flavors.
Ingredients

- 1 tablespoon butter
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups beef broth
- 1 cup sauerkraut, drained and rinsed
- 1 cup Swiss cheese, shredded
- 1/2 cup Thousand Island dressing
- 1/2 cup milk
- 1/4 teaspoon black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add ground beef and cook until browned. Drain excess fat.
- Add onion and cook until soft, about 5 minutes.
- Stir in garlic and cook for 1 minute more.
- Sprinkle flour over the mixture and stir for 1 minute.
- Gradually whisk in beef broth until smooth.
- Bring to a simmer and cook until slightly thickened, about 5 minutes.
- Stir in sauerkraut, Swiss cheese, Thousand Island dressing, milk, and pepper.
- Heat through until the cheese is melted. Do not boil.
- Serve hot.
Notes
- For a thicker soup, cook a few minutes longer before adding cheese.
- You can substitute corned beef for ground beef for a more traditional flavor.
