Description

A rich and savory soup inspired by the classic Reuben sandwich flavors.


Ingredients

  • 1 tablespoon butter
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 1 cup sauerkraut, drained and rinsed
  • 1 cup Swiss cheese, shredded
  • 1/2 cup Thousand Island dressing
  • 1/2 cup milk
  • 1/4 teaspoon black pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion and cook until soft, about 5 minutes.
  4. Stir in garlic and cook for 1 minute more.
  5. Sprinkle flour over the mixture and stir for 1 minute.
  6. Gradually whisk in beef broth until smooth.
  7. Bring to a simmer and cook until slightly thickened, about 5 minutes.
  8. Stir in sauerkraut, Swiss cheese, Thousand Island dressing, milk, and pepper.
  9. Heat through until the cheese is melted. Do not boil.
  10. Serve hot.

Notes

  • For a thicker soup, cook a few minutes longer before adding cheese.
  • You can substitute corned beef for ground beef for a more traditional flavor.
