A simple and satisfying fettuccine dish with a rich mushroom cream sauce.

- 1 pound fettuccine pasta
- 2 tablespoons olive oil
- 1 pound mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Cook fettuccine according to package directions. Drain, reserving about 1 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
- Stir in Parmesan cheese until melted and smooth.
- Add the cooked fettuccine to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a deeper mushroom flavor, use a mix of mushroom varieties.
- Add cooked chicken or shrimp for a heartier meal.
