Ingredients

  • 1 pound pasta (fettuccine or linguine recommended)
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup pasta water
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining.
  2. While pasta cooks, melt butter in a large skillet over medium heat.
  3. Add minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let it brown.
  4. Pour in the heavy cream and bring to a gentle simmer. Cook for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Reduce heat to low. Gradually stir in the grated Parmesan cheese until the sauce is smooth.
  6. Add the black pepper and salt to taste.
  7. Add the drained pasta to the skillet. Toss to coat thoroughly.
  8. If the sauce is too thick, add the reserved pasta water, a few tablespoons at a time, until you reach your desired consistency.
  9. Serve immediately, garnished with fresh parsley.
