Description

A simple recipe for creamy gnocchi with shredded chicken.


Ingredients

  • 1 pound potato gnocchi
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 4 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  1. Cook gnocchi according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add shredded chicken to the skillet and cook for 2-3 minutes until heated through.
  4. Reduce heat to low. Add cream cheese, heavy cream, and chicken broth to the skillet. Stir until the cream cheese melts and the sauce is smooth.
  5. Stir in garlic powder, onion powder, and black pepper. Season with salt.
  6. Add the cooked gnocchi and Parmesan cheese to the sauce. Toss gently to coat everything evenly.
  7. Cook for 2 minutes, stirring occasionally, until the sauce thickens slightly and the gnocchi is hot.

Notes

  • You can use rotisserie chicken for faster preparation.
  • Add 1/2 cup of frozen peas or spinach during the last minute of cooking for added vegetables.
