Description

Tender meatballs simmered in a rich and creamy coconut curry sauce.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ginger, grated
  • 1 (13.5 ounce) can coconut milk
  • 1/4 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch, mixed with 1 tablespoon water

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, milk, egg, salt, and pepper. Mix well.
  2. Form the mixture into small meatballs.
  3. Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides. Remove meatballs from skillet and set aside.
  4. Add onion to the skillet and cook until softened, about 5 minutes.
  5. Add garlic, curry powder, and ginger. Cook for 1 minute until fragrant.
  6. Pour in coconut milk and chicken broth. Bring to a simmer.
  7. Return meatballs to the skillet. Stir in soy sauce.
  8. Simmer for 15-20 minutes, or until meatballs are cooked through.
  9. Stir in the cornstarch mixture and cook until the sauce thickens.
  10. Serve hot.
