Description

A rich and flavorful potato soup seasoned with Cajun spices.


Ingredients

  • 4 tablespoons butter
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 4 medium potatoes, peeled and diced
  • 1 cup heavy cream
  • 1/2 cup shredded sharp cheddar cheese (optional)
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat.
  2. Add onion, celery, and bell pepper. Cook until softened, about 5 to 7 minutes.
  3. Stir in garlic, Cajun seasoning, thyme, and cayenne pepper, if using. Cook for 1 minute until fragrant.
  4. Pour in chicken broth and add diced potatoes. Bring the mixture to a boil, then reduce heat and simmer until potatoes are tender, about 15 to 20 minutes.
  5. Use an immersion blender or carefully transfer batches to a regular blender to partially blend the soup until you reach your desired consistency. Leave some chunks for texture.
  6. Stir in heavy cream and heat through gently; do not boil after adding cream.
  7. If using, stir in cheddar cheese until melted and smooth.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker soup, mash a few more potato pieces against the side of the pot.
  • Adjust the amount of Cajun seasoning and cayenne pepper based on your spice preference.
  • You can substitute half-and-half for heavy cream for a slightly lighter soup.
