- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tsp Cajun seasoning
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper (optional)
- 1.5 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 8 oz fettuccine pasta, cooked according to package directions
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
- Add garlic, Cajun seasoning, thyme, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer, stirring constantly.
- Reduce heat to low and stir in Parmesan cheese until melted and sauce is smooth.
- Return chicken to the skillet. Stir to coat with sauce.
- Add cooked fettuccine to the skillet and toss to combine with the sauce.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, add more cayenne pepper.
- You can substitute other pasta shapes like penne or rotini.
- Ensure chicken is cooked through before adding to the sauce.
