Description
A simple, hearty casserole featuring ground beef, beans, corn, and a topping of crispy tater tots.

- 1 pound ground beef
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 can (10.75 ounces) condensed cream of mushroom soup
- 1/2 cup milk
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 bag (about 28 ounces) frozen tater tots
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
- In a large bowl, combine the cooked ground beef, black beans, corn, cream of mushroom soup, milk, chili powder, and garlic powder. Mix well.
- Season the mixture with salt and pepper.
- Spread the beef mixture evenly into the prepared baking dish.
- Arrange the frozen tater tots in a single layer over the top of the beef mixture.
- Bake for 30 minutes.
- Remove the casserole from the oven and sprinkle the shredded cheddar cheese over the tater tots.
- Return the casserole to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the tater tots are golden brown.
Notes
- You can substitute cream of chicken soup for cream of mushroom soup if you prefer.
- For extra flavor, add 1/2 cup of chopped onion when browning the beef.
