Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard 12-cup muffin tin well.
  2. In a blender or food processor, combine the cottage cheese, eggs, milk, salt, and pepper. Blend until completely smooth.
  3. Stir in the shredded cheese and any optional mix-ins.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the centers are set and a toothpick inserted comes out clean.
  6. Let the bites cool in the tin for 5 minutes before removing them.
