Simple Christmas Truffles

Description

Make rich chocolate truffles perfect for holiday gifting or serving.


Ingredients

Scale
  • 8 ounces dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon vanilla extract
  • Cocoa powder, for dusting

Instructions

  1. Place the chopped chocolate in a medium heatproof bowl.
  2. Heat the heavy cream and butter in a small saucepan over medium heat until it just simmers. Do not boil.
  3. Pour the hot cream mixture over the chocolate. Let it stand for 5 minutes without stirring.
  4. Add the vanilla extract. Stir the mixture gently from the center outward until smooth and fully combined into a ganache.
  5. Cover the bowl and refrigerate the ganache for at least 2 hours, or until firm enough to scoop.
  6. Line a baking sheet with parchment paper.
  7. Use a small spoon or melon baller to scoop out portions of the ganache. Roll each portion quickly between your palms into a ball shape.
  8. Roll the finished truffles in cocoa powder until fully coated.
  9. Store the truffles in an airtight container in the refrigerator until ready to serve.

Notes

  • For a different flavor, add 1 teaspoon of peppermint extract with the vanilla.
  • If the ganache becomes too soft while rolling, return it to the refrigerator for 15 minutes.
