Description

Simple recipe for rich chocolate cheesecake bars with a graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes. Remove from the oven and let cool slightly.
  4. Beat the softened cream cheese and 1 cup sugar in a large bowl until smooth. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Pour the cream cheese mixture over the cooled crust. Sprinkle the chocolate chips evenly over the top.
  6. Bake for 30 to 35 minutes, or until the center is mostly set.
  7. Cool the bars completely on a wire rack. Chill in the refrigerator for at least 2 hours before cutting into squares.

Notes

  • For cleaner cuts, chill the bars for 4 hours or overnight.
  • Use room temperature cream cheese for a smoother batter.
