- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Add ground beef to the pot and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Stir in the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For a richer flavor, simmer for longer.
- Serve hot.
Notes
- Serve with your favorite toppings such as shredded cheese, sour cream, or chopped cilantro.
- This chili can be made ahead of time and reheats well.
