Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • 12 small corn or flour tortillas
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese

Instructions

  1. Cut the chicken breast into small, bite-sized pieces.
  2. Heat the olive oil in a skillet over medium heat.
  3. Add the chicken pieces to the skillet.
  4. Sprinkle the chili powder, cumin, salt, and pepper over the chicken. Stir to coat.
  5. Cook the chicken for about 5-7 minutes until lightly browned.
  6. Pour the water into the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 10 minutes, or until the chicken is cooked through and tender.
  7. Shred the chicken slightly with two forks in the pan, mixing with the liquid.
  8. Warm the tortillas according to package directions (in a dry skillet or microwave).
  9. Assemble the tacos by filling each warm tortilla with the seasoned chicken and your desired toppings.
