- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 tablespoon olive oil
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 1 packet (1 ounce) fajita seasoning mix
- 1 can (10 ounces) diced tomatoes with green chilies, undrained
- 1 can (10.5 ounces) cream of chicken soup
- 1/2 cup milk
- 1 cup shredded Mexican blend cheese
- 8 flour tortillas, cut into strips
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook until browned.
- Add sliced onion and peppers to the skillet. Cook until vegetables soften, about 5 minutes.
- Stir in the fajita seasoning mix, diced tomatoes with green chilies, cream of chicken soup, and milk. Cook until heated through.
- Fold in the cut tortilla strips.
- Pour the mixture into the prepared baking dish.
- Sprinkle the shredded cheese evenly over the top.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is hot throughout.
Notes
- You can use pre-cooked rotisserie chicken for faster preparation.
- For extra flavor, add 1/2 teaspoon of cumin to the mixture.
