A straightforward recipe for making flavorful chicken chili.


Ingredients

  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 cup chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Brown the ground chicken in a large pot over medium heat. Drain any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the kidney beans, black beans, diced tomatoes, diced tomatoes with green chilies, and chicken broth.
  4. Add the chili powder, cumin, and oregano. Stir to combine.
  5. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally.
  6. Season with salt and pepper before serving.

Notes

  • For a thicker chili, remove the lid during the last 15 minutes of simmering.
  • Serve with your preferred toppings like shredded cheese or sour cream.
