Description

A straightforward recipe for cooking chicken and rice together.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the rice, chicken broth, salt, pepper, and thyme. Bring the mixture to a boil.
  6. Return the browned chicken to the pot.
  7. Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the liquid is absorbed and the rice is tender.
  8. Remove from heat and let stand, covered, for 5 minutes before serving. Fluff the rice with a fork.

Notes

  • You can substitute brown rice, but adjust the cooking time as needed, usually longer.
  • For added flavor, use low-sodium chicken broth.
