Simple Chicken and Dumplings

Description

A straightforward recipe for classic chicken and dumplings.


Ingredients

  • 2 pounds chicken pieces, bone-in or boneless
  • 8 cups water or chicken broth
  • 1 large onion, quartered
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cut into small pieces
  • 3/4 cup milk

Instructions

  1. Place chicken, water or broth, onion, carrots, and celery in a large pot. Bring to a boil, then reduce heat, cover, and simmer until chicken is cooked through, about 45 minutes.
  2. Remove chicken from the pot. Strain the broth into a separate bowl, discarding the vegetables. Skim any excess fat from the broth. You should have about 6 cups of liquid. Return the liquid to the pot and bring to a simmer.
  3. Shred the cooked chicken meat, discarding bones and skin if present. Set the shredded chicken aside.
  4. To make dumplings, whisk together flour, baking powder, and salt in a medium bowl. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the milk until just combined to form a soft dough. Do not overmix.
  6. Drop the dumpling dough by rounded teaspoons directly onto the simmering broth. Do not crowd them.
  7. Cover the pot and simmer for 15 minutes without lifting the lid.
  8. Stir the shredded chicken back into the pot. Simmer for 5 more minutes until the dumplings are cooked through and the stew has thickened slightly.

Notes

  • For richer flavor, use all chicken broth instead of water.
  • If the stew is too thin after cooking, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the simmering stew until thickened.
