Chicken and Bacon Pasta

Description

A simple and satisfying pasta dish with chicken and bacon.


Ingredients

  • 1 pound pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, cook bacon over medium heat until crisp. Remove bacon with a slotted spoon and drain on paper towels. Reserve 2 tablespoons of bacon grease in the skillet.
  3. Add chicken to the skillet and cook until browned and cooked through. Remove chicken and set aside.
  4. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes and heavy cream. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  6. Return chicken and cooked bacon to the skillet. Stir in Parmesan cheese. Season with salt and pepper.
  7. Add cooked pasta to the skillet and toss to coat.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For a spicier dish, add red pepper flakes with the garlic.
  • You can substitute chicken thighs for chicken breasts.
