Description
A simple and satisfying pasta dish with chicken and bacon.
Ingredients

- 1 pound pasta
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, cook bacon over medium heat until crisp. Remove bacon with a slotted spoon and drain on paper towels. Reserve 2 tablespoons of bacon grease in the skillet.
- Add chicken to the skillet and cook until browned and cooked through. Remove chicken and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes and heavy cream. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Return chicken and cooked bacon to the skillet. Stir in Parmesan cheese. Season with salt and pepper.
- Add cooked pasta to the skillet and toss to coat.
- Serve immediately, garnished with fresh parsley.
Notes
- For a spicier dish, add red pepper flakes with the garlic.
- You can substitute chicken thighs for chicken breasts.
