Simple holiday cookies made with Ritz crackers, caramel, and chocolate.

- 1 sleeve Ritz Crackers
- 1 cup (2 sticks) unsalted butter
- 1 cup packed light brown sugar
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Arrange the Ritz crackers in a single layer on the prepared baking sheet.
- In a small saucepan over medium heat, melt the butter and brown sugar together. Stir constantly until the mixture boils. Let it boil for exactly one minute, stirring continuously.
- Pour the hot caramel mixture evenly over the crackers, coating each cracker.
- Bake for 5 minutes.
- Remove the baking sheet from the oven and immediately sprinkle the chocolate chips over the hot caramel layer. Let the chocolate sit for 5 minutes to soften.
- Spread the melted chocolate evenly over the crackers using a small offset spatula.
- Let the cookies cool completely at room temperature until the chocolate is set, about 1 hour. Break the crackers apart before serving.
Notes
- You can substitute milk chocolate or dark chocolate chips for semi-sweet.
- Store finished cookies in an airtight container at room temperature.
