A straightforward recipe for baked cannelloni filled with seasoned ground beef and covered in sauce.

- 12 dried cannelloni tubes
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 2 cups shredded mozzarella cheese
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
- Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute more.
- Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Stir in tomato sauce, oregano, salt, and pepper. Simmer for 10 minutes. Remove from heat and let cool slightly.
- In a medium bowl, combine ricotta cheese, Parmesan cheese, egg, and spinach. Mix well.
- Gently mix the cooled meat sauce into the ricotta mixture.
- Carefully stuff the cannelloni tubes with the meat and cheese filling. You can use a piping bag or a small spoon.
- Arrange the filled cannelloni tubes in a single layer in the prepared baking dish.
- Pour any remaining meat sauce over the top of the tubes. Sprinkle evenly with mozzarella cheese.
- Bake for 30 to 35 minutes, or until the sauce is bubbly and the cheese is melted and lightly browned.
Notes
- If you do not have cannelloni tubes, you can use lasagna noodles, cooked al dente, cut into rectangles, and rolled around the filling.
- For a richer flavor, substitute half of the ground beef with ground pork or Italian sausage.
