  • 1/2 cup chopped bell pepper (green or red)
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil

Instructions

  1. Prepare the grits: Bring water or broth and milk to a boil in a saucepan. Slowly whisk in the grits. Reduce heat to low, cover, and simmer for 20 to 25 minutes, stirring occasionally until thick. Stir in 2 tablespoons of butter, cheese, salt, and pepper. Keep warm.
  2. Season the shrimp: Toss the shrimp with 1 teaspoon of Cajun seasoning.
  3. Sauté the vegetables: Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add onion, bell pepper, and celery. Cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Make the sauce base: Sprinkle flour over the vegetables and cook for 1 minute, stirring constantly. Gradually whisk in the 1/2 cup chicken broth until smooth. Bring to a simmer.
  5. Cook the shrimp: Add the seasoned shrimp to the skillet. Cook for 2 to 3 minutes per side until pink and cooked through. Stir in the heavy cream and remaining 1 teaspoon of Cajun seasoning. Simmer for 1 minute.
  6. Serve: Spoon the creamy grits into bowls. Top with the Cajun shrimp and sauce.
