A straightforward recipe for creamy Cajun chicken pasta.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1/2 cup milk
- 1/2 cup grated Parmesan cheese
- 8 ounces pasta (penne or rotini recommended)
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Season chicken pieces with salt, pepper, and Cajun seasoning.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove chicken from the skillet.
- Add onion to the skillet and cook until softened, about 3 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in cream of mushroom soup and milk. Heat until simmering.
- Stir in Parmesan cheese until the sauce is smooth.
- Return the cooked chicken to the skillet.
- Add the cooked pasta to the skillet and toss to coat everything in the sauce.
- Serve immediately.
Notes
- You can substitute cream of chicken soup for cream of mushroom soup if preferred.
- Adjust the amount of Cajun seasoning based on your preference for spice level.
