Description
A basic, filling soup made primarily with cabbage and vegetables.
Ingredients

- 1 head green cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 large onion, chopped
- 6 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place the chopped cabbage, carrots, celery, and onion in a large pot.
- Pour in the vegetable broth and add the diced tomatoes.
- Stir in the dried thyme and add the bay leaf.
- Bring the soup to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for 30 minutes, or until the vegetables are tender.
- Remove the bay leaf before serving.
- Season with salt and pepper to your taste.
Notes
- For a richer flavor, you can add 1 cup of chopped mushrooms with the other vegetables.
- If you prefer a thinner soup, add more vegetable broth during simmering.
