Simple Brown Rice Pilaf

Description

A basic recipe for cooking fluffy brown rice with vegetables.


Ingredients

  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the brown rice under cold water.
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the chopped onion, carrots, and celery. Cook until softened, about 5 minutes.
  4. Add the rinsed brown rice to the saucepan and cook for 1 minute, stirring constantly.
  5. Pour in the vegetable broth. Add the salt and pepper.
  6. Bring the mixture to a boil.
  7. Reduce the heat to low, cover the saucepan, and simmer for 40 to 45 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during cooking.
  8. Remove the saucepan from the heat and let it stand, covered, for 10 minutes.
  9. Fluff the rice gently with a fork before serving.

Notes

  • For added flavor, substitute half the broth with chicken broth.
  • You can add 1/4 cup of dried cranberries during the last 5 minutes of simmering.
