Ingredients

  • 4 tablespoons butter
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 pound fresh broccoli florets
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in chicken broth until smooth.
  5. Add broccoli florets and bring to a simmer. Cook until broccoli is tender, about 10 minutes.
  6. Reduce heat to low. Stir in milk.
  7. Gradually add shredded cheese, stirring until melted and the soup is smooth. Do not boil after adding cheese.
  8. Season with salt and pepper.
