- 4 tablespoons butter
- 1/2 cup chopped onion
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1 pound fresh broccoli florets
- 2 cups milk
- 2 cups shredded sharp cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Stir in flour and cook for 1 minute.
- Gradually whisk in chicken broth until smooth.
- Add broccoli florets and bring to a simmer. Cook until broccoli is tender, about 10 minutes.
- Reduce heat to low. Stir in milk.
- Gradually add shredded cheese, stirring until melted and the soup is smooth. Do not boil after adding cheese.
- Season with salt and pepper.
Notes
- For a thicker soup, cook the onion mixture longer before adding the broth.
- Use freshly shredded cheese for the best melting results.
