Ingredients

  • 4 tablespoons butter
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 pound fresh broccoli florets
  • 1 cup milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in chicken broth until smooth.
  5. Add broccoli florets. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
  6. Stir in milk. Heat through, but do not boil.
  7. Remove pot from heat. Gradually stir in shredded cheese until melted and the soup is smooth.
  8. Season with salt and pepper.

Notes

  • For a thicker soup, simmer longer before adding milk.
