Ingredients

- 4 tablespoons butter
- 1/2 cup chopped onion
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1 pound fresh broccoli florets
- 1 cup milk
- 8 ounces sharp cheddar cheese, shredded
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Stir in flour and cook for 1 minute.
- Gradually whisk in chicken broth until smooth.
- Add broccoli florets. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
- Stir in milk. Heat through, but do not boil.
- Remove pot from heat. Gradually stir in shredded cheese until melted and the soup is smooth.
- Season with salt and pepper.
Notes
- For a thicker soup, simmer longer before adding milk.
- Shred your own cheese for better melting.
