Ingredients

  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 2 cups chicken broth
  • 2 cups chopped fresh broccoli florets
  • 1/2 cup shredded carrot
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Pour in chicken broth, add broccoli and carrots. Bring to a simmer and cook until vegetables are tender, about 10 minutes.
  4. In a separate bowl, whisk flour into milk until smooth.
  5. Slowly pour the milk mixture into the simmering soup, stirring constantly until the soup thickens.
  6. Reduce heat to low. Stir in cheddar cheese until melted and smooth. Do not boil after adding cheese.
  7. Season with salt and pepper. Serve hot.
