- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter, plus more for cooking
Instructions
- Mix flour, sugar, baking powder, and salt in a medium bowl.
- Whisk milk, egg, and melted butter in a separate bowl.
- Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix. A few lumps are fine.
- Heat a lightly buttered griddle or non-stick pan over medium heat.
- Drop small spoonfuls (about 1 teaspoon) of batter onto the hot surface.
- Cook for 1-2 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the other side until golden brown.
- Remove from the griddle and serve immediately.
Notes

- You can add small chocolate chips to the batter before cooking.
