A simple and flavorful one-pan meal featuring creamy Boursin cheese, tender chicken, and orzo pasta.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 (5.2 ounce) container Boursin Garlic & Fine Herbs cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add orzo pasta to the skillet and toast for 1-2 minutes, stirring constantly.
- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is al dente and most of the liquid is absorbed.
- Stir in Boursin cheese and Parmesan cheese until melted and creamy.
- Return the cooked chicken to the skillet. Stir to combine and heat through.
- Stir in fresh parsley. Season with salt and pepper to taste.
- Serve immediately.
Notes
- For a richer flavor, you can use heavy cream instead of some of the chicken broth.
- Add your favorite vegetables like spinach or peas in the last few minutes of cooking.
