Description

A simple and flavorful one-pan meal featuring creamy Boursin cheese, tender chicken, and orzo pasta.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1 (5.2 ounce) container Boursin Garlic & Fine Herbs cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
  2. Add orzo pasta to the skillet and toast for 1-2 minutes, stirring constantly.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is al dente and most of the liquid is absorbed.
  4. Stir in Boursin cheese and Parmesan cheese until melted and creamy.
  5. Return the cooked chicken to the skillet. Stir to combine and heat through.
  6. Stir in fresh parsley. Season with salt and pepper to taste.
  7. Serve immediately.

Notes

  • For a richer flavor, you can use heavy cream instead of some of the chicken broth.
  • Add your favorite vegetables like spinach or peas in the last few minutes of cooking.
