A recipe for a classic blueberry pie featuring a decorative lattice top crust.

- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1/2 cup ice water
- 6 cups fresh or frozen blueberries
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- 1 large egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (for sprinkling)
Instructions
- Prepare the pie dough: Mix flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough just comes together. Divide the dough in half, flatten into disks, wrap, and chill for at least 1 hour.
- Prepare the filling: In a large bowl, gently mix blueberries, granulated sugar, cornstarch, lemon juice, and cinnamon. Set aside.
- Assemble the bottom crust: On a lightly floured surface, roll out one dough disk into a 12-inch circle. Carefully place it into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang.
- Fill the pie: Pour the blueberry mixture into the bottom crust.
- Create the lattice top: Roll out the second dough disk into an 11-inch circle. Cut the dough into even strips, about 3/4 inch wide. Weave the strips over the filling to create a lattice pattern. Trim the ends and crimp the top and bottom crust edges together to seal.
- Brush and sprinkle: Brush the lattice top with the beaten egg wash and sprinkle evenly with coarse sugar.
- Bake: Preheat your oven to 425 degrees F (220 degrees C). Place the pie on a baking sheet. Bake for 15 minutes at 425 degrees F. Reduce the oven temperature to 375 degrees F (190 degrees C) and continue baking for 40 to 50 minutes, or until the crust is golden brown and the filling is bubbling.
- Cool: Let the pie cool on a wire rack for at least 3 hours before slicing and serving.
Notes
- If using frozen blueberries, do not thaw them before mixing with the other filling ingredients.
- If the crust edges start browning too quickly during baking, cover them loosely with aluminum foil.
- For a richer flavor, substitute half of the granulated sugar with light brown sugar.
