Description

A simple recipe for hearty, slow-cooked chili.


Ingredients

  • 2 lbs ground beef
  • 1 large onion, chopped
  • 2 (15 ounce) cans kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (28 ounce) can crushed tomatoes
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  2. Transfer the browned beef to the slow cooker.
  3. Add the chopped onion, kidney beans, black beans, crushed tomatoes, diced tomatoes with green chilies, and beef broth to the slow cooker.
  4. Stir in the chili powder, cumin, oregano, salt, black pepper, and cayenne pepper, if using. Mix everything well.
  5. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  6. Stir before serving.

Notes

  • Serve with shredded cheese, sour cream, or chopped green onions for topping.
