- 1 tablespoon olive oil
- 1 pound ground beef
- 1 large onion, chopped
- 2 bell peppers, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can pinto beans, drained and rinsed
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Set your Instant Pot to ‘Sauté’ mode. Add olive oil and ground beef. Cook until browned, breaking it up with a spoon. Drain excess fat.
- Add chopped onion and bell peppers to the pot. Cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add crushed tomatoes, kidney beans, black beans, pinto beans, and beef broth to the pot.
- Stir in chili powder, cumin, salt, and pepper.
- Secure the lid and set the valve to ‘Sealing’. Select ‘Manual’ or ‘Pressure Cook’ mode on high pressure for 15 minutes.
- Once the cooking cycle is complete, allow a natural pressure release for 10 minutes, then carefully perform a quick release for any remaining pressure.
- Open the lid and stir the chili. Serve hot.
Notes
- Serve with your favorite toppings like shredded cheese, sour cream, or chopped cilantro.
- For a spicier chili, add a pinch of cayenne pepper or a diced jalapeño with the vegetables.
