Chili Stuffed Baked Potatoes

Description

Hearty baked potatoes filled with flavorful chili.


Ingredients

  • 4 large baking potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Shredded cheddar cheese, for topping
  • Sour cream, for topping
  • Chopped green onions, for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them several times with a fork.
  3. Bake the potatoes directly on the oven rack for 50-60 minutes, or until tender.
  4. While the potatoes are baking, heat the olive oil in a large skillet over medium-high heat.
  5. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  6. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  7. Stir in the minced garlic and cook for 1 minute more until fragrant.
  8. Add the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper.
  9. Bring the mixture to a simmer, then reduce the heat and cook for 15-20 minutes, stirring occasionally, until the chili has thickened.
  10. Once the potatoes are tender, carefully cut them in half lengthwise.
  11. Gently fluff the inside of each potato half with a fork.
  12. Spoon the chili mixture generously into each potato half.
  13. Top with shredded cheddar cheese, sour cream, and chopped green onions.

Notes

  • For crispier skins, rub the potatoes with a little oil and salt before baking.
  • You can add other vegetables to the chili, such as bell peppers or corn.
  • Adjust the chili powder to your spice preference.
