Beef Stroganoff With Egg Noodles

Description

A classic beef stroganoff served over egg noodles.


Ingredients

  • 1.5 pounds beef sirloin, thinly sliced
  • 1 pound egg noodles
  • 8 ounces mushrooms, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook egg noodles according to package directions. Drain and set aside.
  2. Season beef slices with salt and pepper.
  3. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Brown beef in batches, then remove from skillet and set aside.
  4. Add remaining 2 tablespoons of butter to the skillet. Add onion and cook until softened, about 5 minutes. Add mushrooms and cook until browned, about 5-7 minutes. Add garlic and cook for 1 minute more.
  5. Sprinkle flour over the mushroom and onion mixture. Stir and cook for 1 minute.
  6. Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Return beef to the skillet. Reduce heat to low and simmer for 5-10 minutes, or until beef is tender and sauce has thickened.
  8. Stir in sour cream and Dijon mustard. Heat through but do not boil.
  9. Season with salt and pepper to taste.
  10. Serve stroganoff over cooked egg noodles. Garnish with fresh parsley.

Notes

  • For a richer flavor, you can use beef chuck roast and braise it until tender before slicing.
  • Adjust the amount of Dijon mustard to your preference.
  • If the sauce is too thick, add a little more beef broth or water.
