Simple and quick beef quesadillas perfect for a weeknight meal.
Ingredients

- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 8 large flour tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped onion (optional)
- 1/4 cup chopped bell pepper (optional)
- 1 tablespoon vegetable oil
Instructions
- Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
- If using, add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Wipe out the skillet. Add the vegetable oil and heat over medium heat.
- Place one tortilla in the skillet. Sprinkle half of the tortilla with 1/4 cup cheese, then top with about 1/4 cup of the beef mixture. Fold the other half of the tortilla over the filling.
- Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
- Repeat with the remaining tortillas, cheese, and beef mixture.
- Cut each quesadilla in half and serve immediately.
Notes
- Serve with your favorite toppings like salsa, sour cream, or guacamole.
- For extra flavor, add a pinch of cumin or chili powder to the beef mixture.
