Beef Quesadillas

Description

Simple and quick beef quesadillas perfect for a weeknight meal.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped onion (optional)
  • 1/4 cup chopped bell pepper (optional)
  • 1 tablespoon vegetable oil

Instructions

  1. Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
  2. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  3. If using, add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Wipe out the skillet. Add the vegetable oil and heat over medium heat.
  5. Place one tortilla in the skillet. Sprinkle half of the tortilla with 1/4 cup cheese, then top with about 1/4 cup of the beef mixture. Fold the other half of the tortilla over the filling.
  6. Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
  7. Repeat with the remaining tortillas, cheese, and beef mixture.
  8. Cut each quesadilla in half and serve immediately.

Notes

  • Serve with your favorite toppings like salsa, sour cream, or guacamole.
  • For extra flavor, add a pinch of cumin or chili powder to the beef mixture.
