Description

Classic beef enchiladas with a rich chili sauce and melted cheese.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (4 ounce) can diced green chilies
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (for serving)
  • 1/4 cup chopped fresh cilantro (for serving)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  3. Stir in the minced garlic, tomato sauce, diced green chilies, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Warm the corn tortillas slightly to make them pliable. You can do this by wrapping them in a damp paper towel and microwaving for 30 seconds, or by briefly heating them in a dry skillet.
  5. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Sprinkle with a little of the Monterey Jack cheese.
  6. Roll up the tortillas and place them seam-side down in a 9×13 inch baking dish.
  7. Pour the remaining beef sauce over the enchiladas.
  8. Sprinkle the remaining Monterey Jack cheese and the cheddar cheese evenly over the top.
  9. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Let stand for 5 minutes before serving. Serve topped with sour cream and fresh cilantro.

Notes

  • For spicier enchiladas, add a pinch of cayenne pepper to the sauce.
  • You can add a can of drained black beans to the beef mixture for extra protein and fiber.
  • If you prefer a smoother sauce, you can blend the tomato sauce and green chilies before adding them to the skillet.
