Description

A simple casserole combining ground beef, enchilada sauce, and tortellini pasta.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10 ounce) can red enchilada sauce
  • 1 (15 ounce) can tomato sauce
  • 1 (8 ounce) package cream cheese, cubed
  • 1 (16 ounce) package cheese tortellini, cooked and drained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and onion in a large skillet over medium heat. Drain off any excess fat.
  3. Stir in the enchilada sauce, tomato sauce, chili powder, and cumin. Bring the mixture to a simmer.
  4. Reduce the heat to low. Add the cubed cream cheese and stir until it melts and the sauce is smooth.
  5. Fold in the cooked and drained tortellini.
  6. Pour the mixture into the prepared baking dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly.

Notes

  • You can substitute ground turkey for ground beef.
  • For extra flavor, add 1/2 cup of chopped green chilies to the sauce mixture.
