A simple and quick one-pan meal featuring seasoned ground beef and rice.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup uncooked white rice
- 2 cups beef broth
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, salt, pepper, and oregano. Cook for 1 minute more until fragrant.
- Pour in the undrained diced tomatoes, uncooked rice, and beef broth. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes.
- If desired, sprinkle with shredded cheddar cheese before serving.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the other seasonings.
- You can substitute ground turkey or chicken for ground beef.
