Description

A simple and quick one-pan meal featuring seasoned ground beef and rice.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, salt, pepper, and oregano. Cook for 1 minute more until fragrant.
  4. Pour in the undrained diced tomatoes, uncooked rice, and beef broth. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let stand, covered, for 5 minutes.
  7. If desired, sprinkle with shredded cheddar cheese before serving.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the other seasonings.
  • You can substitute ground turkey or chicken for ground beef.
