Simple Beef and Broccoli Stir Fry

Description

A quick recipe for beef and broccoli stir fry made with a savory sauce.


Ingredients

  • 1 pound flank steak, thinly sliced against the grain
  • 1 large head of broccoli, cut into florets
  • 2 tablespoons soy sauce (for marinating)
  • 1 tablespoon cornstarch (for marinating)
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup beef broth
  • 1/4 cup soy sauce (for sauce)
  • 2 tablespoons brown sugar
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)

Instructions

  1. In a bowl, toss the sliced beef with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Set aside for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and cook until browned, about 2-3 minutes per side. Remove beef from the skillet and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic and grated ginger and cook for 30 seconds until fragrant.
  4. Add the broccoli florets to the skillet. Stir fry for 3-4 minutes until bright green. Add 1/4 cup of beef broth, cover, and steam for 2 minutes until tender-crisp.
  5. In a small bowl, whisk together the remaining 1/2 cup beef broth, 1/4 cup soy sauce, brown sugar, and oyster sauce. Pour this mixture into the skillet. Bring to a simmer.
  6. Stir the cornstarch slurry and pour it into the simmering sauce, stirring constantly until the sauce thickens.
  7. Return the cooked beef to the skillet. Toss everything together until the beef is coated in the sauce.
  8. Remove from heat and stir in the sesame oil. Serve immediately.

Notes

  • For best results, slice the flank steak when it is partially frozen.
  • You can substitute low-sodium soy sauce if desired.
  • Serve over steamed white or brown rice.
