Ingredients

- 1.5 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup BBQ sauce, divided
- 1/4 cup ketchup
- 1 tablespoon brown sugar
Instructions
- Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin.
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, and pepper. Mix well.
- Press the meat mixture evenly into the prepared muffin cups.
- In a small bowl, whisk together 1/4 cup BBQ sauce, ketchup, and brown sugar.
- Spoon or brush the BBQ glaze over the top of each meatloaf cupcake.
- Bake for 25-30 minutes, or until the meatloaf is cooked through and the glaze is slightly caramelized.
- Let cool slightly before removing from the muffin tin.
Notes
- For extra flavor, you can add a tablespoon of Worcestershire sauce to the meat mixture.
- Serve with your favorite side dishes.
