Description

Savory meatloaf baked in cupcake form with a tangy BBQ glaze.


Ingredients

  • 1.5 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup BBQ sauce, divided
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, and pepper. Mix well.
  3. Press the meat mixture evenly into the prepared muffin cups.
  4. In a small bowl, whisk together 1/4 cup BBQ sauce, ketchup, and brown sugar.
  5. Spoon or brush the BBQ glaze over the top of each meatloaf cupcake.
  6. Bake for 25-30 minutes, or until the meatloaf is cooked through and the glaze is slightly caramelized.
  7. Let cool slightly before removing from the muffin tin.

Notes

  • For extra flavor, you can add a tablespoon of Worcestershire sauce to the meat mixture.
