Simple recipe for crispy baked zucchini sticks seasoned and served as a side dish.

- 2 medium zucchini
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Cooking spray
Instructions
- Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with parchment paper and lightly coat with cooking spray.
- Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into sticks about 1/4 inch thick.
- Set up a dredging station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. Mix panko breadcrumbs, Parmesan cheese, salt, pepper, and garlic powder in the third dish.
- Take one zucchini stick and coat it lightly in flour, shaking off any excess.
- Dip the floured stick into the beaten egg, allowing excess to drip off.
- Roll the stick thoroughly in the breadcrumb mixture, pressing gently so the crumbs adhere.
- Place the coated zucchini sticks in a single layer on the prepared baking sheet.
- Lightly spray the tops of the zucchini sticks with cooking spray.
- Bake for 12 to 15 minutes, flipping halfway through, until golden brown and crisp.
Notes
- Serve immediately with your favorite dipping sauce, like marinara or ranch dressing.
- For extra crispiness, you can bake them for an additional 2-3 minutes until they reach your desired texture.
