Description

Simple bars combining the flavor of apple pie with a soft snickerdoodle cookie base and topping.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup granulated sugar (for coating)
  • 2 cups diced apples (about 2 medium apples)
  • 1 tablespoon lemon juice
  • 1/4 cup packed light brown sugar

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream together the softened butter and 1 1/2 cups granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. In a small bowl, mix the 1/2 cup granulated sugar and 1 tablespoon cinnamon for the coating.
  5. Press two-thirds of the dough evenly into the bottom of the prepared pan. Sprinkle half of the cinnamon-sugar mixture over the dough.
  6. In a medium bowl, toss the diced apples with the lemon juice and brown sugar. Spread the apple mixture evenly over the dough layer.
  7. Crumble the remaining one-third of the dough over the apples. Sprinkle the remaining cinnamon-sugar mixture over the top layer.
  8. Bake for 35 to 40 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean (avoiding the apple layer).
  9. Let the bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares.

Notes

  • Use firm, slightly tart apples like Granny Smith for the best texture and flavor contrast.
  • You can substitute ground nutmeg for half of the cinnamon in the topping for a different spice profile.
